There are many ways to classify cheeses. One unique way is by the type of rind. A mould cheese is any cheese that uses surface bloomy or interior moulds to help it mature. A few examples of mould cheeses we carry include Brie, Camembert and St Andre.

Natural rind is a cheese that is not covered with a cloth, wax or mould. The natural rind cheeses actually use their own coatings to protect themselves. Lancashire and english Stilton are a couple of the natural rind cheeses at Eastman Party Store/The Mouse House.
Pressed cheeses are made from curd that has or has not been "cooked" to complete the drainage of whey. These come from the very respectable Neil's Yard Dairy. All Neil's Yard Dairy cheeses have been carefully crafted to meet very high expectations. Other Pressed cheese include Gouda, Parmigiano, Reggiano & Gruyere.
Wash-rind cheeses are surface washed in brine or alcohol to encourage the growth of bacteria. Washed rinds are potent and sticky cheese. Some of these include Tallegio, Durras and Pont- L'eveque.
Fresh cheeses are uncooked and unripened curd that may or may not be drained from its whey. Examples we carry at Eastman Party Store are Mascarpone and Ricotta.
